  • 1 ½ lb chicken breast(680 g), cubed
  • 2 tablespoons butter
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 16 oz penne pasta(455 g), cooked
  • ¼ cup fresh parsley(10 g)
  • ¼ cup shredded parmesan cheese(25 g)



  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 3 tablespoons flour
  • 2 cups milk(480 mL)
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ cup shredded parmesan cheese(55 g)
  • ½ teaspoon salt
  • ½ teaspoon pepper



  • Spoons, knives, measuring cups, and cutting board

  • Heat the pan over medium-high flame, melt butter, and then add the chicken breast.
  • Spice with salt, pepper, oregano, and basil. Cook the chicken for 8-10 minutes till it is fully cooked. Remove from heat and put the chicken on a clean plate.
  • Use the same pan over medium heat, melt the butter, and add the garlic. Then cook until the garlic begins to soften.
  • Add half of the flour to the garlic and butter, stirring until merged. Then add the leftover flour and stir.
  • Pour in the milk a little bit at a time, stirring well in between, until fully incorporated and the sauce begins to thicken.
  • Spice with salt, pepper, basil, and oregano, and stir well to mix.
  • Now, add parmesan cheese into that mixture and stir until melted.
  • Pour the sauce over the cooked pasta, also add the chicken, and mix well.
  • Add parsley and extra parmesan. Mix well.
  • It’s ready. Now eat and enjoy!

Can heavy cream be substituted?

There is a difference between authentic Alfredo and American Alfredo. Authentic Alfredo doesn’t use any heavy cream, while American Alfredo does use it. It helps the Parmesan to melt smoothly instead of clumping or sticking to the bottom of the pan. Many other dairy products or dairy alternatives contain too much water to allow the cheese to melt into the sauce accurately. So I do not suggest replacing the heavy cream.


Fresh vs. grated Parmesan

Freshly shredded Parmesan always trumps rather than grated Parmesan from a can. There’s no argument there. But we’re not cooking on a high budget here, so I made sure this recipe tastes great even with using less expensive Parmesan. If you have room in your budget for a piece of fresh Parmesan, then you should use it! But still, you can make a tasty Alfredo even if you can’t afford the expensive stuff.
